    Thank you for the peroxide tip!
    I had trouble with the dioxide sulfite when i wanted to bake my christmass bread just with sider. Because when if heats up, the sulfite bad taste increases.
    I knew that it is used since the Romans just as a dissinfectant.
    You could try different wood containers to store your wine vinegar. And perhaps try adding some fruit juice as to make the Italian 'acceto balsamico'.

    After you "did the math", did you dilute the wine with water to lower the alcohol content to less than 9%?

    After the peroxide does its gig it converts into water so you should be good. I’m really enjoying your videos!
