Hard strong flavor cheeses with Sauternes. From inexpensive Château Coutet to the holy grail Château d'Yquem. I love most cheeses with Sauternes

Cheddar cheese and beer… Have you heard of Wisconsin.

I'm definitely more of a beer and cheese guy, but I wouldn't turn my nose up at a blue paired with tawny Port, as you suggest. However, while I don't have a huge sweet tooth when it comes to desserts, I might prefer many a blue with a syrupy Pedro Ximenez.

Back on the beer and cheese tip, one of my favorite pairings that I've never heard anyone else suggest is a butterscotchy, crystalline, aged gouda with a roasty porter like the one Anchor makes. It's like Fred and Ginger dancing in your mouth.
