    My Chinese friends also poach pears in water with sugar crystals, they do this usually in summer because they believe that this concoction help lower body temperature during hot weather and can even help alleviate heat stroke. But your version with wine looks a lot better! Thanks Chef!

    Great recipe Chef Erik. In my culinary institute we let the red wine coulis boil and then we add the pears. Is there any difference between both methods?
